Hey y’all..I’ve got two special recipes I wanna share..in hopes that you might share one or two in the comments section!
Sweet Potato Souffle
- 2 cans of sweet potatoes (or 3 big fresh ones..yum)
- 1 cup of brown sugar (do not sing Rollings Stones while preparing souffle)
- 1/2 teaspoon salt
- 1 stick of butter (because butter makes everything taste better)
- 1/2 cup of whole milk
- 2 teaspoons vanilla
- 1 bag of mini marshmallows
- 1 cup chopped pecans
- 2 teaspoons of Fox Vineyard’s Muscadew (optional)
cook potatoes till boiling..add butter..beat eggs, vanilla, salt and milk then add to potatoes..remove from heat and add sugar and mix with mixer..bake in greased 2-1/2 quart casserole dish at 325 for 40 minutes..remove from oven and top with pecans then finally marshmallows..return to oven for another 5 minutes or until brown on top..call me and tell me it’s ready and I’ll come taste test!
Robyn’s Watergate Scandal Salad
- 1 large cool whip
- 1 small sour cream
- 1 large can of crushed pineapple with juice
- 1 cup of chopped pecan
- 2 cups of mini marshmallows (to make it scandalous, buy the assorted pack of marshmallows and pick out all the tiny green ones..and just use them)
- 1 package of pistachio Jello pudding mix
combine cool whip, sour cream and pudding mix..fold in pineapple, marshmallows and pecans..chill..then go to The Robyn’s Nest and buy some cool Christmas presents without leaving the kitchen..remove salad from refrigerator and enjoy..yes, it is possible to eat the entire thing in one sitting.
